- 1 ½ cups chopped walnuts (or pecans)
Instructions
- Preheat the oven to 350°F. Grease two 8×4-inch loaf pans.
- In a medium bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt; set aside.
- In a large bowl, mix grated zucchini, vegetable oil, eggs, and vanilla until well combined.
- Fold the dry ingredients into the wet mixture gently using a spatula. Stir in chopped nuts.
- Divide the batter evenly between the prepared loaf pans and bake for about 50-60 minutes or until a toothpick comes out clean.
- Let cool in pans for about 15 minutes before transferring to wire racks to cool completely.
