- 1 pound lean ground beef
- 1 medium onion, diced
- 2–3 cloves garlic, minced
- 1 packet taco seasoning
- 1 (15 oz) can black beans
- 1 (15 oz) can corn kernels
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (10.5 oz) can cream of mushroom soup
- 1 cup sour cream
- 2 cups shredded Mexican cheese blend
- 9.25 oz bag Nacho Cheese Doritos
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large skillet over medium heat, brown the ground beef, onion, and garlic until meat is cooked through; drain excess fat.
- Stir in taco seasoning, black beans, corn, and diced tomatoes; simmer for 2-3 minutes.
- In a bowl, combine cream of mushroom soup and sour cream until smooth.
- Layer half of the beef mixture in the baking dish, followed by half of the cream mixture, one cup of cheese, and half of the crushed Doritos. Repeat layers.
- Cover with foil and bake for 15 minutes; remove foil and bake an additional 10 minutes until bubbly.
- Let rest for 5-10 minutes before serving; garnish as desired.
