- 1 box vanilla cake mix
- 3 large eggs
- 1 cup water
- ½ cup vegetable oil
- 1 pint strawberry ice cream (softened)
- 1 pint mint chocolate chip ice cream (softened)
- 1 pint blueberry ice cream (softened)
- 2 cups heavy whipping cream
- ½ cup powdered sugar
- 1 tsp vanilla extract
- Food coloring (various colors)
- Edible glitter
- Sprinkles
Instructions
- Preheat oven to 350°F (175°C) and prepare the cake mix according to package instructions. Allow it to cool completely.
- Soften each pint of ice cream at room temperature.
- Cut the cooled cake horizontally in half and layer with strawberry ice cream first, followed by the second layer of cake topped with mint chocolate chip ice cream.
- Add a final layer of blueberry ice cream on top and freeze for at least 2 hours.
- Whip heavy cream with powdered sugar and vanilla until stiff peaks form; color as desired with food coloring.
- Frost the frozen cake with whipped cream, create swirls, and decorate with glitter and sprinkles.
