Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In one bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, mix the sugar, oil/butter, eggs, vanilla extract, lemon juice, and lemon zest until well combined.
- Gently combine wet and dry ingredients without overmixing.
- Fold in the grated zucchini.
- Pour batter into the prepared pan and bake for 50–60 minutes or until a toothpick comes out clean.
- Let cool before glazing with a mixture of powdered sugar and lemon juice.
