Instructions
- Chop cherry tomatoes in half and add to a mixing bowl.
- Peel, seed, and dice the cucumber; add to the bowl.
- Remove pit from avocado, dice it into cubes, and add.
- Cube feta cheese and mix in gently.
- Add minced red onion and parsley.
- In a separate bowl, whisk together olive oil, vinegar, and black pepper; pour over salad.
- Toss gently to combine without breaking the avocado or feta too much.
- Serve immediately for optimal freshness.
