Instructions
- Wash and slice the cucumber into thin rounds (about 1/8-inch thick) and place in a large mixing bowl.
- Rinse, hull, and slice the strawberries (about 1/4-inch thick) before adding them to the bowl.
- In a small bowl, combine olive oil, balsamic vinegar, honey, salt, and pepper; whisk until well blended.
- Pour the dressing over the cucumber and strawberries; gently toss to coat evenly.
- Add freshly cut mint leaves (chiffonade) and toss one last time.
- Allow the salad to sit for about 5-10 minutes before serving.
