Instructions
- Preheat your oven to 400°F (200°C).
- Roll out one pie crust into a 9-inch pie dish.
- Cube peeled peaches and mix with lemon juice, sugar, tapioca starch, vanilla extract, and smoked paprika in a bowl.
- Pour the peach filling into the prepared crust.
- Roll out the second crust and create a lattice top or cover it entirely.
- Brush the top with an egg wash and sprinkle with sugar.
- Bake for 40-50 minutes until bubbly and golden.
- Cool before serving.
