Instructions
- Marinate the Chicken: Slice chicken into strips and combine marinade ingredients in a bowl. Coat chicken well, cover, and refrigerate for at least 30 minutes.
- Prepare the Peanut Sauce: Whisk together all sauce ingredients in a saucepan over low heat until smooth and heated through.
- Grill the Chicken: Thread marinated chicken onto skewers and grill on medium heat for about 4 minutes per side or until cooked through.
- Serve: Plate the chicken skewers with peanut sauce on the side and garnish with cucumber slices.
