- 1 lb ground beef
- 1 cup white onion, finely chopped
- ½ cup green bell pepper, diced
- 1 packet taco seasoning
- ¼ cup salsa
- 2 cups Colby Jack cheese, shredded
- 16 egg roll wrappers
- Canola or vegetable oil for frying
Instructions
- In a large skillet over medium-high heat, cook ground beef and chopped onion for about 7 minutes until browned.
- Add diced green bell pepper, taco seasoning, salsa, and a splash of water; cook until thickened.
- Lay an egg roll wrapper on a clean surface and spoon 2 tablespoons of filling and cheese onto it. Fold and roll tightly, sealing edges with water.
- Heat oil in a deep skillet to 350°F (175°C). Fry egg rolls in batches for 2-3 minutes per side until golden brown.
- Drain on paper towels and serve hot with your favorite dipping sauce.
