- 2 roasted corn cobs
- 3 green onions
- 1 shallot
- 2 jalapeños
- ½ cup cilantro
- 1 cup cotija cheese
- 1 cup sour cream
- ½ cup mayonnaise
- Juice and zest of 1 lime
- Spices: smoked paprika, chili powder, salt, and pepper
Instructions
- Roast the corn for about 10-15 minutes in a frying pan until golden brown. Cut off the kernels.
- Cook the pasta in salted boiling water until al dente; drain and drizzle with olive oil.
- Prepare fresh ingredients by slicing green onions and mincing shallots, jalapeños, garlic, and cilantro.
- Mix dressing ingredients (sour cream, mayo, lime zest/juice, spices) in a bowl until smooth.
- Combine pasta, corn, vegetables, cotija cheese in a large bowl. Pour dressing over the top and mix well.
