- 1 cup water
- 8 tablespoons unsalted butter

- 2 teaspoons white sugar
- 1 cup all-purpose flour
- 3–4 eggs
- 1 egg (for egg wash)
- 2 teaspoons water (for egg wash)
- 8 oz white chocolate, chopped
- Pink gel food coloring
- Strawberry custard (store-bought or homemade)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a saucepan, boil water, butter, salt, and sugar. Remove from heat and stir in flour until combined.
- Gradually mix in eggs until smooth and shiny.
- Pipe the dough onto the baking sheet and brush with egg wash.
- Bake for 15 minutes at 425°F then reduce temperature to 375°F (190°C) for another 20-25 minutes until golden brown.
- Cool completely before filling each eclair with strawberry custard.
- Melt white chocolate with pink gel food coloring for glaze; dip eclair tops and chill before serving.
