Ingredients
- 1 egg, separated
- 75g plain flour
- 1 tsp baking powder
- 1 tbsp caster sugar
- 100ml milk
- 1 tbsp neutral oil
- 250g 15%-fat beef mince
- 2 slices American cheese or mild cheddar
- 30ml burger sauce
- 40g sliced gherkins
Instructions
- In a bowl, beat the egg white until soft peaks form. In another bowl, mix egg yolk, flour, baking powder, and sugar; gradually add milk until smooth. Gently fold in egg white.
- Heat oil in a non-stick pan over medium heat. Pour in pancake batter to form four pancakes, cooking each side for about 2-3 minutes until golden brown.
- In the same pan on high heat, shape beef mince into two balls, smash them into patties, cook for 2-3 minutes on each side, adding cheese until melted.
- Layer pancakes with a patty, burger sauce, and gherkins. Top with another pancake and serve immediately.
