  2. Heat oil in a non-stick pan over medium heat. Pour in pancake batter to form four pancakes, cooking each side for about 2-3 minutes until golden brown.
  3. In the same pan on high heat, shape beef mince into two balls, smash them into patties, cook for 2-3 minutes on each side, adding cheese until melted.
  4. Layer pancakes with a patty, burger sauce, and gherkins. Top with another pancake and serve immediately.
