- 2 lbs beef chuck, cut into cubes
- 1 large onion, diced
- 4 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp turmeric
- 1 tsp paprika
- 1/2 tsp chili powder (optional)
- 1 can (14 oz) coconut milk
- 1 can (14 oz) diced tomatoes
- 1/2 cup beef broth
- 1 tbsp tomato paste
- Salt and pepper to taste
- 2 tbsp oil (for browning)
Instructions
- Prepare the ingredients by dicing the onion and mincing the garlic.
- In a heavy-bottomed pot or slow cooker, heat oil over medium-high heat. Brown the beef cubes for about 5-7 minutes until seared on all sides.
- Remove the beef and sauté onions until translucent; add garlic and ginger, cooking for one more minute.
- Return the beef to the pot along with coconut milk, diced tomatoes, broth, spices, salt, and pepper. Mix well.
- Cover and cook on low for 6-8 hours in a slow cooker or on low heat for 2-3 hours in a heavy pot.
- Serve hot with garlic naan or rice.
