- 1.5 lb raw shrimp (peeled and deveined)
- 2 tablespoons olive oil
- 2 tablespoons salted butter
- 1/2 cup chopped onion
- 5 cloves garlic (minced)
- 1.5 cups cooked corn kernels
- 1 teaspoon chili powder
- ¼ teaspoon salt (to taste)
- 1 teaspoon smoked paprika
- 1 cup half-and-half
- 4 oz feta cheese (crumbled)
- Fresh cilantro and lime for garnish
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add shrimp seasoned with chili powder and salt; cook until pink and opaque, about 2-3 minutes per side. Remove from skillet.
- In the same skillet, melt butter and sauté onion until translucent (4-5 minutes). Add garlic and sauté until fragrant.
- Stir in corn and smoked paprika, then add half-and-half. Mix well and crumble half of the feta into the sauce.
- Return shrimp to the skillet, simmer for 3-4 minutes until heated through, adjusting seasoning as needed.
- Serve garnished with lime juice, remaining feta, and cilantro.
