  • 1 cup half-and-half
  • 4 oz feta cheese (crumbled)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add shrimp seasoned with chili powder and salt; cook until pink and opaque, about 2-3 minutes per side. Remove from skillet.
  2. In the same skillet, melt butter and sauté onion until translucent (4-5 minutes). Add garlic and sauté until fragrant.
  3. Stir in corn and smoked paprika, then add half-and-half. Mix well and crumble half of the feta into the sauce.
  4. Return shrimp to the skillet, simmer for 3-4 minutes until heated through, adjusting seasoning as needed.
  5. Serve garnished with lime juice, remaining feta, and cilantro.
