Ingredients
- 1 salmon fillet
- 1 tsp soy sauce
- 1 tsp honey or maple syrup
- 1 tsp sesame oil
- 1 medium sweet potato, peeled and sliced into wedges
- 1 cup broccoli florets
- 1 tsp olive oil
- 1 tsp paprika
- Salt & pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potato wedges in a mixing bowl with olive oil, paprika, salt, and pepper. Spread on a baking tray and roast for 25-30 minutes until crispy.
- In a separate bowl, mix soy sauce, honey or maple syrup, sesame oil, and rice vinegar (if using). Place the salmon on a lined baking tray and brush generously with the glaze. Sprinkle black sesame seeds on top.
- Bake salmon for 12-15 minutes until cooked through.
- Steam broccoli florets for about 4-5 minutes until bright green and tender.
- Serve salmon alongside sweet potato wedges and broccoli, drizzling any remaining glaze over the top.
