- 1 cup cooked white rice (jasmine or basmati)
- 1 lb ground beef (or ground turkey/chicken)
- 2 tbsp soy sauce
- 1 tsp garlic powder
- 1 tbsp sesame oil or olive oil
- Assorted vegetables: broccoli, zucchini, red and yellow bell peppers, mushrooms
- Salt and pepper to taste
Instructions
- Cook the rice according to package instructions; set aside.
- In a skillet, heat sesame oil over medium heat. Add the ground beef and cook until browned. Stir in soy sauce, garlic powder, salt, and pepper; cook until well combined.
- In another pan, heat olive oil over medium-high heat. Add minced garlic and chopped vegetables; stir-fry for 5-7 minutes until tender-crisp. Drizzle with soy sauce and toss.
- To serve, layer rice in a bowl followed by ground beef and stir-fried veggies.
