Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Sear beef chunks until browned on all sides, then remove from the pot.
  2. In the same pot, cook onions and garlic until translucent. Stir in flour and cook for one additional minute.
  3. Add the seared beef back into the pot along with sliced mushrooms. Pour in beef broth, tomato paste, and Worcestershire sauce. Bring to a boil then reduce heat to simmer.
  4. Add fresh herbs and cover the pot; simmer for about 1.5 hours until beef is tender.
  5. Season with salt and pepper to taste; cook uncovered for the last 30 minutes if a thicker sauce is desired.
