- 3 lb bone-in lamb shoulder
- Salt & freshly ground black pepper
- 1/4 cup honey
- 3 tbsp soy sauce
- 4 cloves garlic, minced
- 8 cloves whole garlic, peeled
Instructions
- Preheat your oven to 325°F (163°C).
- Pat the lamb shoulder dry and season generously with salt and black pepper.
- In a bowl, mix honey, soy sauce, and minced garlic until smooth.
- Place the lamb in a roasting pan, add whole garlic cloves around it, and brush half the glaze over the top.
- Roast for approximately 2.5 to 3 hours, basting every 30 minutes until the internal temperature reaches at least 145°F (63°C).
- Allow to rest for 15 minutes before carving.
