Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In one bowl, whisk together all-purpose flour, almond flour, baking powder, and salt.
- In another bowl, cream softened butter and granulated sugar until fluffy.
- Mix in the egg, vanilla extract, and almond extract until combined.
- Gradually add dry ingredients to wet mixture; stir until just combined.
- For the filling, heat raspberry jam with cornstarch and lemon juice in a saucepan until thickened; cool completely.
- Shape dough into balls; create an indent in each and fill with cooled jam before sealing.
- Roll filled balls in powdered sugar and place on the baking sheet.
- Bake for 12–14 minutes until lightly golden; cool before serving.
