Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine melted butter, pumpkin puree, white sugar, egg, and vanilla extract; mix until smooth.
- Gradually add flour, pumpkin pie spice, baking powder, and salt until a dough forms.
- Chill the dough in the refrigerator for 25 minutes.
- Roll the chilled dough into balls and place on a parchment-lined baking sheet.
- Bake for approximately 18 minutes or until lightly golden around the edges.
- For the frosting, beat softened cream cheese and unsalted butter together; gradually add powdered sugar and vanilla extract until smooth.
- Once cooled, frost each cookie generously with the cream cheese frosting.
