- 1 1/4 cups all-purpose flour, spooned and leveled

- 1/4 tsp granulated white sugar
- 1/2 cup unsalted butter, cold
- 4–6 tbsp cold water
- 15 oz pumpkin puree
- 14 oz sweetened condensed milk
- 2 large eggs
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp nutmeg
- pinch of all-spice
- pinch of ground cloves
Instructions
- Prepare the Pie Crust: Mix flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Add cold water gradually, then roll out the dough and fit it into a pie dish. Chill.
- Make the Filling: Whisk together pumpkin puree, sweetened condensed milk, eggs, salt, and spices until smooth.
- Assemble & Bake: Preheat oven to 425°F (220°C). Pour filling into crust; bake for 15 minutes. Lower temperature to 350°F (175°C) and continue baking for 35-40 minutes until set.
- Cool & Serve: Let pie cool completely before slicing. Top with whipped cream if desired.
