- 2 cups all-purpose flour
- 1 1/2 cups rolled oats
- 1 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 tablespoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until mixed.
- Press half the crumble mixture into the prepared baking dish as the base layer.
- In another bowl, whisk together pumpkin puree, granulated sugar, eggs, pumpkin pie spice, and vanilla until smooth.
- Pour pumpkin filling over the crumble base evenly.
- Sprinkle remaining crumble mixture on top of the filling and add optional chopped walnuts if desired.
- Bake for 30–35 minutes until golden brown; let cool completely before slicing.
