Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until mixed.
  3. Press half the crumble mixture into the prepared baking dish as the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Pour pumpkin filling over the crumble base evenly.
  6. Sprinkle remaining crumble mixture on top of the filling and add optional chopped walnuts if desired.
