- ¼ cup whole milk
- ½ cup pumpkin puree
- ¼ teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a cookie sheet with parchment paper.
- In one bowl, mix flour, pumpkin spice, and salt. In another bowl, blend cream cheese and butter until smooth; add sugars, egg yolk, and vanilla.
- Gradually combine dry ingredients with the wet mixture until just mixed.
- Roll dough into balls and coat in coarse sugar before placing on the prepared sheet.
- For the filling, whisk together egg, brown sugar, salt, pumpkin spice, milk, pumpkin puree, and vanilla until smooth.
- Create an indent in each cookie ball; fill with about one teaspoon of the pumpkin mixture.
- Bake for 15 minutes or until edges are golden brown. Cool before serving.
