Instructions
- In a skillet over medium heat, melt the butter and combine it with cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice. Stir until thickened.
- Mix in graham cracker crumbs and white chocolate chips until smooth. If desired, add food coloring.
- Pour the mixture onto a greased baking sheet, spread evenly, and refrigerate for about 2 hours or until firm.
- Once chilled, roll into small balls using buttered hands.
- Roll each truffle in granulated sugar for coating.
- Decorate with chocolate chips on top before serving.
