- 1 lb boneless, skinless chicken thighs
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1 tbsp lime juice
- 1 cup fresh pineapple, cubed
- 8 small tortillas (flour or corn)
- Optional toppings: sliced jalapeño, sliced avocado, diced red onion, chopped cilantro
Instructions
- In a mixing bowl, combine chicken thighs with chili powder, cumin, paprika, and lime juice. Mix well and marinate for at least 15 minutes.
- Heat a skillet or grill pan over medium-high heat. Add oil if necessary.
- Cook the marinated chicken for about 5–7 minutes on each side until fully cooked (internal temperature should reach 165°F). Remove from heat and let rest before slicing.
- Warm tortillas in a separate skillet or over the flame until soft.
- Assemble tacos by layering tortillas with sliced chicken, cubed pineapple, red onion, cilantro, and any desired toppings.
- Serve immediately while warm.
