Instructions
- Peel and pit the peaches, then chop them finely. Wash the jalapeños, remove seeds for milder flavor, and chop finely.
- In a large saucepan, combine chopped peaches, jalapeños, lemon zest, and lemon juice. Heat over medium-high until boiling.
- Stir in sugar once boiling and continue stirring until dissolved. Maintain a rolling boil for 15-20 minutes until thickened.
- Test consistency with a metal spoon; if it coats the back without dripping quickly, it's ready.
- Transfer hot jam into clean jars, leaving about 1/4 inch of space at the top. Seal and let cool to room temperature.
