Instructions
- Prepare the crust by crushing the Oreo cookies and mixing with melted butter and sugar. Press into a springform pan and refrigerate for at least 30 minutes.
- Beat softened cream cheese and granulated sugar in one bowl until smooth. Dissolve cherry Vegan Gelatin in boiling water and let cool.
- Whip heavy cream with powdered sugar until stiff peaks form.
- Fold cooled gelatin into whipped cream, then incorporate the cream cheese mixture, diced cherries, and chocolate chips.
- Pour the filling over the crust, garnish with whole cherries, and refrigerate for at least 4 hours before serving.
