Instructions
- In a large bowl, combine chopped chicken with curry powder, smoked paprika, garlic powder, and olive oil. Mix well.
- Heat olive oil in a large pot over medium heat. Sauté diced onion until translucent.
- Add bell peppers and carrots; cook until softened.
- Stir in the seasoned chicken and cook until browned on all sides.
- Cover and reduce heat to low; simmer for 20-30 minutes until chicken is cooked through.
