  • 1 can of drained tuna in water
  • 1.5 tablespoons paleo mayonnaise
  • 1/2 avocado, thinly sliced
  • 2 small English cucumbers, cut into matchsticks
  • 4 butter lettuce leaves
  • 2 tablespoons alfalfa sprouts
  • 2 nori sheets
  • 1 teaspoon roasted sesame seeds
  • 1 tablespoon coconut aminos (for dipping)
  • 1 tablespoon paleo Sriracha (for dipping)

Instructions

  1. In a bowl, combine the drained tuna with paleo mayonnaise and season with salt and pepper.
  2. Lay one nori sheet on a cutting board. At one end, place the butter lettuce leaves, followed by cucumber matchsticks, avocado slices, alfalfa sprouts, sesame seeds, and finally the tuna mixture in a straight line.
  3. Roll the nori sheet tightly away from you until all fillings are enclosed. Repeat with the second sheet.
  4. Slice the rolls into bite-sized pieces as desired and serve immediately with coconut aminos and paleo Sriracha on the side.
