Instructions
- Preheat your oven to 325°F (163°C). Grease two loaf pans with nonstick cooking spray.
- In a large mixing bowl, whisk together eggs, vegetable oil, sugar, grated zucchini, and vanilla until well combined.
- In a separate bowl, mix flour, baking soda, salt, cinnamon, and baking powder.
- Gradually add the dry ingredients to the wet mixture, stirring until just blended.
- Toss chocolate chips in a tablespoon of flour and fold them into the batter gently.
- Divide the batter evenly between the prepared loaf pans and sprinkle extra chocolate chips on top if desired.
- Bake for about one hour or until a toothpick inserted comes out clean.
