- 1 tsp vanilla extract
- 1/2 tsp mint extract
- 4 large eggs

- 1/2 cup white chocolate chips
- 2 cups heavy cream (divided)
- Semi-sweet chocolate for the glaze
Instructions
- Preheat your oven to 350°F (177°C). Grease a 9×13-inch baking pan.
- Melt butter, sugar, cocoa powder, and salt in a saucepan over low heat. Cool slightly before adding vanilla and mint extracts.
- Beat in eggs one at a time until fully incorporated. Fold in flour gently.
- Pour batter into prepared pan and bake for 25–28 minutes until a toothpick comes out with moist crumbs.
- For the mousse, melt white chocolate with 3/4 cup heavy cream. Cool down before mixing in whipped cream, salt, peppermint extract, and food coloring.
- Spread mousse over cooled brownies.
- Prepare glaze by heating heavy cream and pouring it over chopped semi-sweet chocolate until smooth; pour over mousse layer.
- Refrigerate for at least three hours before slicing.
