Instructions

  1. Preheat your oven to 350°F (177°C). Grease a 9×13-inch baking pan.
  2. Melt butter, sugar, cocoa powder, and salt in a saucepan over low heat. Cool slightly before adding vanilla and mint extracts.
  3. Beat in eggs one at a time until fully incorporated. Fold in flour gently.
  4. Pour batter into prepared pan and bake for 25–28 minutes until a toothpick comes out with moist crumbs.
  5. For the mousse, melt white chocolate with 3/4 cup heavy cream. Cool down before mixing in whipped cream, salt, peppermint extract, and food coloring.
  6. Spread mousse over cooled brownies.
  7. Prepare glaze by heating heavy cream and pouring it over chopped semi-sweet chocolate until smooth; pour over mousse layer.
