  • Total Time: 30 minutes
  • Yield: Serves 4

Ingredients

Scale
  • 2 pounds steak (sirloin, skirt, or flank)
  • 2 tablespoons Mexicali seasoning
  • 1 large lime (juiced)
  • 1 tablespoon avocado oil
  • cilantro lime rice
  • corn salsa
  • sautéed onions and peppers
  • guacamole
  • cheese (cotija, oaxaca, monterrey jack, or pepper jack)
  • pico de gallo
  • shredded lettuce
  • pickled red onions
  • pickled jalapeños
  • cilantro ranch dressing

Instructions

  1. Marinate the steak by mixing Mexicali seasoning, lime juice, and avocado oil in a bowl. Coat the steak thoroughly and let it marinate for at least 10 minutes.
  2. Preheat a skillet or grill pan over medium-high heat. Cook the marinated steak for 4–5 minutes on each side until desired doneness is achieved. Remove from heat and let rest before slicing.
  3. In the same pan, sauté sliced onions and peppers until caramelized (about 5–7 minutes).
  4. To assemble your burrito bowl, start with a base of cilantro lime rice, then layer grilled steak slices, sautéed vegetables, corn salsa, guacamole, pico de gallo, cheese, shredded lettuce, pickled onions, and jalapeños as desired.
  5. Drizzle with cilantro ranch dressing or your preferred topping.
