Instructions
- Preheat oven to 375°F (190°C).
- Grease a 9×13-inch baking dish with olive oil.
- In a large bowl, combine chicken, zucchini, tomatoes, onion, and garlic. Drizzle with olive oil and sprinkle with seasonings; toss to coat.
- Spread the mixture evenly in the baking dish and top with mozzarella and Parmesan cheese.
- Cover with foil and bake for 20 minutes; uncover and bake for an additional 10–15 minutes until cheese is golden brown and chicken is cooked through.
- Garnish with chopped parsley before serving.
