- 1 slice whole grain or sourdough bread
- 1 ripe avocado
- 2 thick tomato slices
- 2 soft-boiled eggs
- 1 cup cucumber slices
- 1/2 cup feta cheese, cubed
- 1/4 cup olives (Kalamata + green)
- 1 tsp olive oil
- Fresh parsley or cilantro, chopped
- Salt & black pepper to taste
Instructions
- Toast the bread until golden brown. In a bowl, mash the avocado with salt. Spread it onto the toasted bread.
- Boil water in a pot and gently place the eggs in it. Cook for exactly 7 minutes, then transfer them to an ice water bath.
- Once cooled, peel the eggs and slice them in half.
- On a serving plate, arrange the toasted bread with halved eggs, cucumber slices, cubed feta cheese, and olives. Top with chopped herbs and additional salt and pepper if desired.
- Drizzle with olive oil before serving for extra flavor.
