  • 3 tsp baking powder
  • ½ tsp fine salt
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • 1 ½ cups full cream milk
  • ½ cup vegetable oil
  • 2 tbsp Greek yogurt or sour cream
  • 1 tsp vanilla extract
  • Food gels (pink/red for strawberry; yellow for mango)
  • Tequila (optional)

Instructions

  1. Preheat oven to 275°F (140°C) for fan-forced or 320°F (160°C) for conventional. Line two cupcake tins.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Add softened butter and mix until combined.
  3. In another bowl, combine eggs, milk, oil, yogurt, tequila (if using), and vanilla extract.
  4. Divide batter into two portions: add pink/red food gel and strawberry flavoring to one; yellow food gel and mango flavoring to the other.
  5. Fill cupcake liners with alternating layers of strawberry and mango batter.
  6. Bake for 40–50 minutes until a toothpick comes out clean. Cool on wire racks.
  7. Prepare buttercream with similar color/flavor combinations as the batter.
  8. Decorate cooled cupcakes with buttercream swirls and garnish with lime wedges and strawberries.
