Instructions
- Peel and dice the mango.
- Peel the cucumber, scoop out its seeds, and dice it.
- Rinse the blueberries under cold water.
- Cut the avocado in half, remove the pit, scoop out the flesh, and dice.
- In a large bowl, combine mango, cucumber, blueberries, and avocado.
- In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper.
- Pour the dressing over the salad mixture and toss gently to combine.
- Sprinkle chopped cilantro on top and give it a final gentle toss before serving.
