Malvern Pudding (Custard Apple Pudding)

Malvern Pudding, also known as Custard Apple Pudding, is a traditional English dessert that beautifully combines tender apples with a luscious custard base, all crowned with a golden layer of caramelized sugar.

  • Total Time: 40 minutes
  • Yield: Serves approximately 8 people 1x

Ingredients

Scale
  • 375 g cooking apples (e.g., Bramleys)
  • 375 g eating apples (e.g., russets)
  • 45 g butter (for apples)
  • 60 g caster sugar (for apples)
  • 500 ml whole milk
  • 3 large egg yolks
  • 1½ teaspoons vanilla bean paste
  • 60 g demerara sugar (for topping)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Peel, core, and chop the apples. In a saucepan, melt butter on medium heat, add the apples and caster sugar, cooking until soft but not mushy (5-7 minutes).
  3. In a bowl, whisk together plain flour and milk until smooth. Add egg yolks and vanilla; whisk well.
  4. Layer the cooked apple mixture in a baking dish and pour the custard over it.
  5. For the topping, mix demerara sugar, butter, and cinnamon until crumbly; sprinkle on top.
  6. Bake for about 20 minutes or until golden brown. Let cool slightly before serving.
