  • 1 1/2 cups graham cracker crumbs
  • 24 oz cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup water
  • 1 tbsp unflavored Vegan Gelatin
  • 1/2 cup lime juice
  • Zest of 2 limes
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 cup heavy cream (for topping)
  • 2 tbsp powdered sugar (for topping)
  • Lime slices and zest (for garnish)

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl; press into the bottom of the pan and chill.
  3. Beat cream cheese and sugar until smooth; add eggs one at a time, mixing well. Pour over crust and smooth top.
  4. Bake for 45-50 minutes or until set; cool completely.
  5. Bloom Vegan Gelatin in water, dissolve, then mix with lime juice and zest.
  6. Whip heavy cream with powdered sugar until stiff peaks form; fold into lime mixture.
  7. Spread lime mousse over cooled cheesecake; refrigerate for at least 4 hours.
  8. Top with whipped cream before serving; garnish with lime slices.
