- 1 1/2 cups graham cracker crumbs
- 24 oz cream cheese
- 1 cup granulated sugar

- 1 tbsp unflavored Vegan Gelatin

- Zest of 2 limes
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 cup heavy cream (for topping)
- 2 tbsp powdered sugar (for topping)
- Lime slices and zest (for garnish)
Instructions
- Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
- Combine graham cracker crumbs, sugar, and melted butter in a bowl; press into the bottom of the pan and chill.
- Beat cream cheese and sugar until smooth; add eggs one at a time, mixing well. Pour over crust and smooth top.
- Bake for 45-50 minutes or until set; cool completely.
- Bloom Vegan Gelatin in water, dissolve, then mix with lime juice and zest.
- Whip heavy cream with powdered sugar until stiff peaks form; fold into lime mixture.
- Spread lime mousse over cooled cheesecake; refrigerate for at least 4 hours.
- Top with whipped cream before serving; garnish with lime slices.
