Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, beat together eggs, sugar, oil, yogurt, lemon zest, lemon juice, and vanilla until smooth.
- Combine wet and dry ingredients gently without overmixing.
- Fold in the grated zucchini until evenly distributed.
- Pour the batter into the prepared loaf pan and bake for 50–55 minutes until a toothpick comes out clean.
- Cool in the pan for about 10–15 minutes before transferring to a wire rack.
