Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In one bowl, whisk together flour, baking powder, and salt. In another bowl, cream softened butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla extract and lime zest.
- Gradually combine dry ingredients with milk and lime juice until just combined.
- Fill cupcake liners three-fourths full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
- Cool completely before coring each cupcake to fill with sweetened condensed milk mixed with lime juice and zest.
- Prepare frosting by beating softened butter, powdered sugar, and lime juice until fluffy. Frost each filled cupcake generously.
- Garnish with lime zest, graham cracker crumbs, and decorative lime slices.
