Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, whisk together flour, baking powder, and salt. In another bowl, cream softened butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla extract and lime zest.
  3. Gradually combine dry ingredients with milk and lime juice until just combined.
