- 5 cups chicken broth

Instructions
- Heat olive oil in a large pan over medium heat. Add diced carrot, celery, and onion; sauté for 3–4 minutes until softened. Stir in minced garlic and cook for another minute.
- Add canned chopped tomatoes, cherry tomatoes, chicken broth, salt, and pepper. Bring to a boil then reduce heat to simmer for 10–15 minutes.
- Mix in chopped fresh basil and blend the soup until smooth using a blender or an immersion blender.
- For an added flavor boost, blend some basil leaves with olive oil and drizzle over the soup before serving.
