Ingredients

  • Almond flour
  • Leinsamen (flaxseed)
  • Vegan butter
  • Apples
  • Tofu
  • Cashew nuts
  • Coconut milk

Instructions

  1. Preheat the oven to 180°C (350°F). In a bowl, mix gluten-free flour, almond flour, flaxseed eggs, vegan butter, and sugar until smooth. Press into the bottom of a baking pan.
  2. Bake the crust for 15 minutes until lightly golden. Allow it to cool.
  3. In a pot, cook diced apples with lemon juice and water for 10 minutes. Stir in sugar, cornstarch, cinnamon, and spices until thickened.
  4. Blend tofu, soaked cashews, coconut milk, maple syrup, and lime juice until creamy. Add vanilla extract and cornstarch; blend again.
  5. Pour apple filling over the cooled crust followed by the cheesecake layer. Smooth the top.
  6. Bake for about 30 minutes until set. Cool completely before refrigerating.
