Instructions
- Preheat the oven to 180°C (350°F). In a bowl, mix gluten-free flour, almond flour, flaxseed eggs, vegan butter, and sugar until smooth. Press into the bottom of a baking pan.
- Bake the crust for 15 minutes until lightly golden. Allow it to cool.
- In a pot, cook diced apples with lemon juice and water for 10 minutes. Stir in sugar, cornstarch, cinnamon, and spices until thickened.
- Blend tofu, soaked cashews, coconut milk, maple syrup, and lime juice until creamy. Add vanilla extract and cornstarch; blend again.
- Pour apple filling over the cooled crust followed by the cheesecake layer. Smooth the top.
- Bake for about 30 minutes until set. Cool completely before refrigerating.
