- 4 pounds apples (about 9 medium-sized), peeled and cored
- 1 cup apple cider
- 3/4 cup light brown sugar
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon kosher salt
- Juice of half a lemon (about 1 tablespoon)
Instructions
- In a large pot, combine the apples, apple cider, brown sugar, cinnamon, cloves, and salt. Cook over medium-low heat uncovered for about 1 hour until apples are soft.
- Use a hand blender to puree the mixture until smooth. If you don’t have one, transfer small batches to a regular blender.
- Return the pureed mixture to the pot and cook uncovered over medium-low heat for another hour until thickened and deep mahogany brown.
- Stir in the lemon juice before transferring to jars for storage.
