Instructions
- Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- For the crust, cream together butter and sugar. Mix in flour and salt until crumbly, then press into the bottom of the pan. Bake for 15 minutes.
- Meanwhile, prepare the filling by tossing diced peaches with sugar, lemon juice, and cornstarch.
- Spread the peach mixture over the baked crust.
- For the topping, whisk together eggs, sugar, sour cream, flour, and vanilla extract until smooth. Pour over the peach layer.
- Bake for an additional 35–40 minutes until set and golden. Cool completely before cutting.
