Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan with parchment paper and cooking spray.
- In a large mixing bowl, whisk together the egg, applesauce, honey or maple syrup, vanilla extract, cinnamon, baking soda, baking powder, and salt.
- Stir in the shredded zucchini until well combined.
- Gently fold in the flour until just mixed; avoid overmixing for tender bread.
- Pour the batter into the loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Cool on a wire rack for at least 30 minutes before slicing.
