- 1 cup very ripe bananas (mashed)

Instructions
- Preheat oven to 350°F (175°C) and prepare a 9" x 5" loaf pan with parchment paper.
- In a bowl, mash the bananas until smooth. Mix in zucchini, egg, oil, maple syrup, vanilla, baking powder, baking soda, and salt until well combined.
- Gradually add flour and stir gently until just combined to avoid overmixing.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool for about 10 minutes in the pan before transferring to a cooling rack.
