Instructions
- Preheat oven to 350°F (175°C) and prepare a muffin tin.

- In another bowl, combine egg, honey, Greek yogurt, milk, coconut oil, and vanilla extract; mix until smooth.
- Gradually add dry ingredients to wet mixture; stir until just combined.
- Fold in diced peaches gently.
- Fill muffin cups about ¾ full and bake for 18-22 minutes or until a toothpick comes out clean.
- Allow cooling for about 5 minutes before transferring to a wire rack.
