- 2 lbs ground beef
- ½ cup crushed tortilla chips
- ¾ cup milk
- 3 fresh jalapeños, seeded and diced
- 8 oz cheddar cheese, diced
- 1 Tbsp paprika
- 2 tsp garlic powder
- 2 tsp kosher salt
Instructions
- In a mixing bowl, soak crushed tortilla chips in milk for about 10 minutes.
- Add ground beef, diced jalapeños, cheddar cheese, paprika, garlic powder, and salt to the soaked chips. Mix until combined.
- Form the mixture into meatballs (⅓ to ½ cup each) and refrigerate for 30 minutes.
- Preheat your grill to medium heat (350°F – 375°F).
- Grill meatballs on the cool side of the grill for 25-35 minutes or until they reach an internal temperature of 165°F.
- Serve warm with your favorite garnishes or sauces.
