Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine chicken drumsticks with olive oil, minced garlic, paprika, oregano, thyme, salt, and pepper. Toss until well coated.
- In another bowl, mix diced potatoes (and optional red bell peppers) with olive oil, paprika, salt, and pepper until evenly coated.
- Arrange seasoned chicken on top of the potato mixture in a baking dish.
- Roast uncovered for about 55 minutes until the chicken is golden brown and the potatoes are crisp-tender. Baste halfway through cooking.
- Serve immediately for best flavor.
