Instructions
- In a mixing bowl, whisk together flour, xanthan gum, baking powder, cinnamon, nutmeg, salt, and brown sugar.
- Stir in milk, oil, eggs (or aquafaba), and vanilla extract until smooth. Gently fold in diced apples.
- Heat oil in a skillet to 360-375°F (180-190°C).
- Drop spoonfuls of batter into hot oil and fry for about 3 minutes per side until golden brown.
- Remove fritters and cool on a wire rack. Glaze with powdered sugar mixed with milk and vanilla.
